It's not a bad idea... thermal mass and a hot baking surface. (Yes, I watch America's Test Kitchen.)

Plus a 0.25 in 10×10 sheet of A36 is like $70 from McMaster Carr.

Oh it’s a great idea, but the steel can be had for less money and any size you want.

ASTM A36 is a structural quality mild carbon steel.
